Buffalo Steak?

(These are wild buffalo, I wonder if this is what domesticated buffalo look like. Image from Yellowstone.com)

I picked up 2 grass-fed buffalo steaks on sale, they are NY steak cut. I have never cooked with buffalo before, any ideas out there on the best way to cook it up. I am so curious to see what it will taste like. I have gotten used to the slight gaminess of grassfed beef. I am wondering if buffalo will be even gamier.

Do I pan fry? Broil? Bake? Marinate?

Help!

  1. There is a buffalo farm near here and the domesticated buffalo look very similar.

I have never cooked a buffalo steak, so I cannot help you with that. But I think it would be the same as a cow, only you might want to keep in mind the fact that it is leaner meat.

  2. I've never cooked buffalo steaks, but because the meat is so lean it might need more flavoring.
