Meatballs you don't have to cook!
Toro Bravo is one our favorite Portland restaurants. Lovely Spanish tapas served in a welcoming, crowded, cozy space. If you go, make sure to try the fried anchovies, oxtail croquettes, chicken liver pate, and the meatballs in almond sauce. Actually, taste everything. We have yet to have a bite of anything that didn't cause us to roll our eyes back into our heads and sigh with joy.
Imagine our surprise when the recipe for Toro Bravo's fabulous, juicy meatballs was posted in the Oregonian! Justin got down to work. The end result, although not swathed in almond sauce, was amazing. The meatballs popped when you bit into them. They were incredibly juicy and tender.
We halved the recipe and it still made about twenty meatballs. Plenty for a large dinner and leftovers for lunch.
