I stumbled across this recipe blog the other day. The author had made a blue cheese stuffed sweet potato wrapped in prosciutto. I love sweet potatoes and yams, and we always have them in the pantry ready for baking, mashing, or roasting.
I modified the recipe a little, switching goat cheese for blue, and microwaved the peeled potatoes rather then boiled them. The sweet potatoes were utterly delicious and very fast to make. I highly recommend it. We ate with with a big green salad with pomegranate seeds and orange segments.
