Stuffed

The trashy teen television of my "youth" (I am not that old yet!) has returned. In celebration, I made Food to Eat in Front of the Television. F.E.F.T. for short. Yes, it is a word. Trust me.

On the plate tonight; stuffed mushrooms, caprese salad kababs, melon with prosciutto, and some nice wine.

Stuffed Mushrooms
1 lb small mushroom
3 garlic cloves
2 slices of prosciutto, chopped
2 slices of dry bread
handful parsley
1/2 block of low-fat cream cheese, cubed
Turn on oven to 350 degrees
Pop the stems out of the mushrooms and throw them in the food processor with the garlic cloves. Process until finely chopped. Add the mix to a hot pan and saute for about 2 minutes until the mushroom release their liquid. Toss in the prosciutto and turn off the heat.
Don't bother cleaning out the food processor. Add the bread slices and parsley and process until fine.
Add mushroom mix and bread mix to a medium bowl, stir in cream cheese until you have a smooth mix.
Using a small spoon, cover the mushroom tops with the mix. There is enough to be generous!
Bake at 350 about 40 minutes until the mushrooms are soft.

Eat in front of the T.V.
